Tonight I made a delicious batch of thai pineapple fried rice with shrimp for dinner. It was mostly based off of this recipe and it was phenomenal. Definitely going on my list of favorite dinners.
I made a big batch of this stuff because I knew I’d want it for lunch again later this week! Here’s what you’ll need:
1 1/4 cups of uncooked rice (which will make about 3+ cups of cooked rice)
3 T chicken broth
1/2 onion, minced
1 orange or red pepper, minced
2 cloves garlic, minced
1 T fresh ginger, grated
1 egg, lightly beaten
3 T soy sauce
2 T curry powder
1 t sugar
1/4 cup cashews, toasted
1/2 cup fresh pineapple chunks
12 uncooked medium sized shrimp
1/4 cup frozen peas
1/4 cup yellow raisins
2 green onions, minced
1/4 cup cilantro, chopped
salt and pepper, to taste
Get your rice started before you do anything else! I like to cook mine with chicken broth – it makes it more flavorful – but you can cook it however you like, and can use any kind of rice you want.
I also like to chop all of the components of a stir fry beforehand, because then the whole process is much quicker. So before I did anything else, I minced everything and set it aside on the cutting board! I also toasted the cashews in a small pan over low heat.
After you’ve done all that, coat the shrimp with 1 T curry powder, salt and pepper in a bowl. Then put them in a saucepan and saute them with olive oil until they are cooked through. After they’re done, remove them and set them aside in a bowl. I cooked them with the tails on, because I don’t mind having to remove the tails as I eat, but you can remove the tails before you cook the shrimp if you’re picky!
Next, saute your onions, garlic and pepper in a sauce pan until the onions are translucent. Then add the chicken stock to the pan with soy sauce, curry powder (1 T) and grated ginger. Cook for another 2 minutes.
Next, add the cashews to the mix. Stir fry for 30 seconds, then add the rice to the pan and continue to cook. Make a well in the middle of the rice/ veggie mixture and pour the egg into the well, stirring to let it fully cook before mixing the egg into the rest of the fried rice. Let everything sit on the stove for a few minutes to meld the flavors together. You may want to add a little bit more soy sauce or chicken stock if it looks dry. Taste it and see what you think!
Finally, add in the rest of the ingredients: the pineapple, shrimp, peas (which should be dethawed by now), raisins, green onions and cilantro. Add salt and pepper to taste and serve warm!
