Garlic Asparagus and Homemade Mac ‘n’ Cheese

Easy Dinner

So, what is one to do when she is home sick from work, down and out with the flu, and going stir crazy with boredom?  Well, this ‘she’ slept, watched season 1 of One Tree Hill (a high school classic), slept some more, and searched pinterest for more delicious recipes.  These two dishes, however, are not from pinterest, but are things I’ve “made up” in the past and were more than manageable with the ingredients I already had and the lackluster energy I could muster.

First, the Asparagus

Garlic Asparagus

This is super basic.  All you need is:

fresh asparagus (I used one bundle of it)

1Tbsp olive oil

1 clove of garlic

salt and pepper to the taste

Wash the asparagus, and then cut off the bottom inch of the veggie (eliminates the dried out part of it).  Preheat the oven for 400 degrees. Grab a cooking pan, I chose a glass 8×8″ but use whatever you have, and lightly grease it.  I took a stick of butter and lightly rubbed the bottom of the pan, just to add some flavor and avoid the asparagus from sticking to the bottom.  Chop or mince the garlic clove.  Place the asparagus in the pan, distribute the minced garlic (…I just stuck it in between the asparagus), and drizzle the Tbsp of olive oil over it.  Cook for 15 minutes, or until desired consistency.  Some people like asparagus really tender, others like it crunchy..15min at 400degrees was a happy medium which is how I like it.  ..aaaand Viola! A tasty, healthy veggie to accompany my dinner that night and lunch the following day!

Next, Easy Homemade Mac ‘n’ Cheese

Healthy Homemade Mac 'n' Cheese

I love this recipe because:

  1.  it’s super easy
  2.  it’s quick and
  3.  it’s healthy– all the delicious cheesy-ness without the processed powdery-ness… 🙂

What you’ll need:

Mac 'n" Chese Ingredients

1/2 c shredded cheese (I chose cheddar, but you can do this with most types of cheese)

1/4 c Italian style bread crumbs

1 Tsp olive oil

whole wheat pasta (I grabbed a handful…depends on how hungry you are!)

salt and pepper to the taste

All you need to do is, boil the water, and cook the pasta like you normally would.  Once the pasta is done and strained, place it into your bowl, add the olive oil, bread crumbs, and shredded cheese, then stir!  add your salt and pepper, and then you’re done! deliciousness in 15 minutes 🙂 My advice would be to start this while the asparagus is cooking… that way you’ll have your pasta done just as the asparagus is finishing and you can sit to eat all at once.
